What Makes "Craft" Chocolate Special

Handmade craft chocolate doesn’t offer the same consistency in flavour as you’d get from a mass produced chocolate bar. Instead, think of craft chocolate like buying a pastry from your local bakery. There are dozens of different factors in making pastries and other baked goods from scratch that can alter the final product. Handmade craft chocolate works the same way. Humidity, temperature, and roast times, are just a few of the variables that, when changed slightly, produce a slightly different end result.

You could go to the store and buy a Hershey’s bar today and go buy another a few years later, and they would taste exactly the same! If you somehow managed to devise a way to travel time, you could go back in time a few years and they would still taste the same.

We include batch numbers on our packaging as a way to organize our chocolate when we test a change in one of the variables. If you have 2 chocolate bars of the same origin, but with different batch numbers, you can expect them to taste slightly different. The roast times, roast temperatures, or some other variable will have been altered slightly. This is part of what makes craft chocolate so amazing.

Each time you break open a Seven Twelve Chocolate bar, pay attention to the flavour profiles and see if you can taste the differences between each origin, and each batch within the origin!
